Given the amount of trophies you lose on defense/offense is equal to the amount of trophies your opponent gains on offense/defense, how does trophy economy work? If it were at a fixed level, I would assume that eventually the average maximum amount of high-level players would be forced down given that so many people join the game. If it is fixed-level, how many total trophies are in the game? If it is actually adjustable/inflatable, how do the trophies get added in? Does COC just add in an extra trophy to your level here and there or do they load trophies onto dummy accounts to be attacked? Does it have to do with inactive players?

Definitely inactive players. Considering it has over 100 million players in total, and many of them will have accounts at lower levels. Medium accounts will be at higher levels and so on. Also there are still thousands of new players every day, each growing at similar rates to add to this.
At low leagues the defender loses less trophies than the attacker gains. This “inflates” the total trophy count enough to compensate for new players.
